Nap time

The red grapes are ready to be transferred to a stainless steel tank for a nice long nap.

Here's what the must looks like after fermentation.

We put it through our small press, squeezing out the wonderful dark red purple liquid, leaving the solid pomace behind.

 

Then it's into stainless steel tanks for a nice long nap to begin settling out.
